**Ingredients:**
– 12 oz (340g) fettuccine pasta
– 4 large eggs
– 1 cup (100g) grated Pecorino Romano cheese
– 1 cup (100g) grated Parmesan cheese
– 200g pancetta or guanciale (Italian cured pork), diced
– 4 cloves garlic, minced
– Freshly ground black pepper, to taste
– Fresh parsley, finely chopped (for garnish)

**Instructions:**

1. **Cook the Pasta:** Begin by cooking the fettuccine pasta in a large pot of salted boiling water until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.

2. **Prepare the Sauce:** In a separate bowl, whisk together the eggs, grated Pecorino Romano cheese, and grated Parmesan cheese. Season generously with freshly ground black pepper. Set aside.

3. **Cook the Pancetta:** In a large skillet over medium heat, cook the diced pancetta or guanciale until it turns crispy and golden brown. Remove from heat and discard excess fat.

4. **Combine Everything:** Return the cooked pasta to the skillet with the crispy pancetta. Toss in the minced garlic and stir well.

5. **Add the Egg Mixture:** Immediately after, pour the egg and cheese mixture over the pasta. The heat from the pasta and pancetta will cook the eggs, creating a luscious, creamy sauce. If the sauce is too thick, gradually add reserved pasta water until desired consistency is achieved.

6. **Serve and Garnish:** Plate the Fettuccine Carbonara and sprinkle with fresh parsley for a burst of color and flavor.

– **Vegetarian Carbonara:** Substitute pancetta with sautéed mushrooms or zucchini for a meatless twist on this classic.
